2 Instructions
Step 1. Blanch the pork ribs in a large pot of boiling water for 5 minutes to remove impurities. Drain the ribs and rinse them thoroughly under cold running water.
Step 2. In a clean, large heavy-bottomed pot or Dutch oven, combine the 2 liters of water, the whole garlic bulbs (wash the exterior but leave the skins on), cinnamon stick, star anise, crushed peppercorns, and soaked shiitake mushrooms.
Step 3. Bring the liquid to a rolling boil over high heat, then carefully add the blanched pork ribs.
Step 4. Once the pot returns to a boil, reduce the heat to low. Cover the pot and allow it to simmer gently for approximately 60 minutes.
Step 5. Stir in the dark soy sauce, light soy sauce, and salt. Continue simmering, covered, for another 30 minutes or until the pork is tender and begins to pull away from the bone.
Step 6. Taste the broth and adjust the salt or soy sauce levels if needed. Remove from heat.
Step 7. Ladle the hot soup and ribs into bowls. Serve immediately with a side of steamed white rice, sliced red chilies in soy sauce, and crispy fried dough crullers (youtiao).
